There are tons of great books, here are some I enjoyed a lot and helped me the most:
George Bridgman's "The human machine" is great, a little confusing to begin with since his approach is a little abstract but it's a classic I guess.
Andrew Loomis's "Figure Drawing For All It's Worth" and almost every other Loomis Book, there is some good knowledge in there about drawing and painting and just being an artist in general.
James Gurney's two books "Color and Light" and "Imaginative Realism" are awesome! I just got them recently and they are amazing.
Just a few but you'll find a lot more good books on your own.
